These Banana Apple Muffins are full of diced apples, bananas, and a touch of cinnamon. Not only are these great for breakfast, but they work perfectly for a midafternoon snack.
1 ½cupsall-purpose flourscooped and leveled with a knife
½cupwhite granulated sugar
2teaspoonsbaking powder
½teaspoonbaking soda
1teaspoonground cinnamon
½teaspoonkosher salt
1largeeggwhisked
⅓cupmelted unsalted butter
1teaspoonpure vanilla extract
2ripebananasmashed
1mediumapplepeeled and diced
½cupmilk
Instructions
Preheat your oven to 400℉.
Prepare your muffin tin by either lining it with paper liners or lightly spraying it with your favorite cooking spray and then set aside.
In a medium-sized bowl, add in the flour, sugar, baking powder, baking soda, ground cinnamon, and salt. Whisk together and set aside.
In a large bowl, add in the whisked egg, melted butter, vanilla, and mashed bananas. Peel and dice the apples and add them into the batter.
Next, add the dry ingredients into the wet. Slowly drizzle the milk in. Then mix together the batter and combine just until you no longer see the flour.
Using a cookie scoop, scoop out enough batter to fill each muffin tin 2/3rds of the way full.
Place into the oven and bake at 400℉ for 5 minutes. Then lower the temp to 375 ℉ and continue baking for 15 - 20 minutes. Bake until they are golden brown.
Taste with a toothpick or a cake tester to ensure the muffins are done. If there is wet batter, put the muffins back into the oven and check them at 5 minute increments. If they are done, remove from the oven and let them cool for a few minutes. Then serve warm.
